In Menu Monday Recipes TBT

TBT :: Menu Monday

Love doing a Throwback Thursday to Menu Monday so you guys can see pictures of the stuff we are eating around here. ( And because a blog post without pics is just plain boring..) So here is what was on the menu this week in the Pryor house .. We tried several new things and I have provided links to the recipes so you can too :) 


Sunday: Tomato/Squash Chicken Pasta
This was an accidental meal. We were going to have homemade chicken nuggets and sauteed squash. But we got home and I realized we didn't have panko bread crumbs! So AJ roasted some tomatoes and squash, threw them in the blender to make a quick sauce and voila! Dinner was served. 




Monday: One Pot Meatball + Sausage Ziti
You can find this recipe HERE from one of my favorite Mama bloggers - PB&J Babes. This is the second time I've made it and holy yum (And holy leftovers!! Age has been eating on this all week for lunch.) Also.. only ONE pot to clean!? Sign me up every time. 



Tuesday: Taco Stuffed Avocados
I have been OBSESSED with avocados lately eating them every morning for breakfast. So I went on a Pinterest hunt to incorporate them into dinner as well. This meal was SUPER simple. We browned ground turkey with a taco seasoning pack, added Mexican blend cheese and stuffed that into hulled avocados. 


Bake at 400 degrees for 10 minutes. (Also use 4 avocados instead of 2, or you're going to have a lot of leftover filling!) Recipe HERE for reference.



Wednesday: Buffalo Chicken Bowls 
We do chiptole bowls a lot, so I thought it would be good to change it up and do buffalo chicken instead. We intended on using THIS recipe, but I forgot the beans.. and added rice.. and let AJ eat an avocado for breakfast. So anywho it's not that recipe at all, but it was good!! hahaha



Thursday: Mexican Turkey Burgers
Bring on some more avocados!! Ground turkey and taco seasoning pack to make the burgers with avocados and cilantro/chipotle aioli on top. Super simple. And not to mention, I will take Mexican food every night of the week, thank you ma'am.

TBT : Kell Bell

Y'ALL .. I am going to Georgia TONIGHT because these roles are about to reverse! My schnook is getting married in TWO days!! 


I met Kelley freshman year of college at UGA in a hallway.. We were both sitting and waiting to interview for Freshman Council of HEROs. 


Of course being the crazy outgoing girl she is, she walked right up to me and it was history from there. We became instant best friends.. I practically lived in her dorm room that year. 


Our bond was sealed with cookie dough, crispy french fries, and power hour at Bourbon. 


Sophomore year we moved in together. And 621 was full of cougars. 


And lots, and LOTS of good nights..


That turned into rough mornings.. 


Junior year she moved into ADPi and I moved downtown, but we still stayed besties. 


Don't know what I would do without her love and friendship. She is the most caring and compassionate girl in the world and I am so lucky to call her my friend.


A LOT of miles separate us these days.. but we will always have our love for the Dawgs and Athens, GA that continue to bring us back together year after year. 


SO ready to see her!! She is with THE perfect match for her and I can't wait to be a part of their tying the knot this weekend!!

TBT : High School Senior Year

With graduation right around the corner, my Facebook news feed is full of spring sports banquet, honors day and yearbook dedication pictures. Today, I wanted to throw it back to seriously one of my all time favorite years of life thus far, senior year of high school. 


Our class was a teeny, tiny size of only 18. Perfectly split with 9 boys and 9 girls. These people were not just my classmates, they were my absolute best friends, like my brothers and sisters, Well except those times when we tried to date each other. That was awkward. I think it's for the best that not a single one of us ended up together! ha!  


We were kinda crazy.. we were always into something. And most of the time it involved Amy's cabin or a field in the woods. It's probably still not safe to tell our mothers our stories from that year. Oh the memories.. I think we were all pretty calm in college, because we got into SO much those last few months of senior year. 


We were always together. Every Thursday night before football we would be into something, Friday nights after the game we would go to Waffle House, Saturday night there was some kind of party and any day in between, our parents didn't bat an eye when we said we were all spending the night together. I loved having my mom's house less than a mile from school - it was always the meet up spot.


After we received our college acceptances, we didn't take much of anything seriously. We spent so much quality time talking about life during that year. We truly loved each other with our whole hearts.. I think we were all kinda scared to experience life without each other. A little weary of the unknown doing life without just us 18. I would give anything to go back for just one day. 


Fortunately, our moms were crazy enough to let us take trips. We would go shopping to buy Brittany some more Gap shirts, or with Katie to another doctors appointment or to support Amy in yet another sport. Senior spring break in Tybee. I don't even have the words.. haha 


We called ourselves the Fab 5. We savored every single minute of that year. And holy cow, I can NOT believe it has been 7 years since this picture. Me and Ames have babies on the way in July and December, Kate is finishing up her maternity leave this week with sweet Mick, Brit is furiously trying to plan a wedding before November, and Laursey is graduating from nursing school this week! I love these girls so SO much and could not imagine not still doing life with them.

TBT : Mother's Day Edition

My mom is the BEST mother in the world.. I know, I know everyone says it. But seriously, a world without my mom is not one I would want to live in. We have been through more in my 25 years than I could ever imagine for an entire lifetime. With mother's day around the corner, I wanted to do a little Throwback Thursday in her honor! 


She has always encouraged me to travel and see the world. We have been on so many adventures and road trips. From driving to Key West on family vacation or a late night run to Louisville for a Dairy Queen Moo Latte, we have ALWAYS been "on the go". We have probably spent more hours in the car together than anywhere else. All those hours of conversation, drive thru dinners, and on the road homework tutoring sessions, I wouldn't trade for the world! 


Maybe why I like my mom so much is we are literally the same person. We look alike, act alike and always most of the time think alike. Our poor husbands when we are in the same room.. they can't handle there being two of us!! Sometimes we can drive each other crazy for being so hard headed!


Nasty cancer rocked our world 7 years ago, but it truly was a blessing in disguise. We spent so much time together in hospitals and chemo treatment centers and we truly learned what we were made of. After that season, we felt like we could conquer the world! I have never been more proud or in awe of the woman she is and absolutely love that she is constantly reaching out to help others with this disease. I strive every day to have that "umph" as she calls it!! Mom, you are my hero!! 


There has not been a single milestone or important date that she has missed out on. She will travel to the end of the world, do whatever she has to do, to be there and make sure every detail about the special day is perfect. She scheduled her chemo treatments around my graduation and college move in day. She made lists on lists and rounded up all of her friends to make sure my wedding was the wedding of my dreams. I will be forever in debt to her..


She keeps everyone on their toes and makes sure everything is in its place. I am so proud that she passed down my go-getter attitude, my insane attention to detail, my OCD organization and my love of taking lead. I just don't understand why everyone else in the world can't load a dishwasher or keep things clean like we do :) 


We graduated college within a year of each other. We were constantly encouraging each other and even took a class together! And what do you know, I ended up in the exact same career as this awesome lady. People ask where I see my career in 10 years or what I want to do with my life.. I simply say, I want to be my mom! 


My mom is my best friend, my cheerleader, my rock I lean on, and the reason I am who I am today. She doesn't just deserve one Sunday a year to be celebrated, she deserves a lifetime of standing ovations. And now I'm crying, so it's time to end this sappy post..


I LOVE YOU MOM!! Can't wait to see you in 13 days!!!!

TBT : MY BEST FRIEND

 My bestest friend in the whollleee wide world is coming to LA tomorrow!! So in her honor.. here is a little throw back Thursday for ya. We have pictures dating back to 1998, but I had to rely on Facebook for these bad boys, so they are all fairly recent.. 

I haven't seen her in 4 weeks! Which is actually quite a short time for us lately.

Especially since the last time she was here was 51 weeks ago!! But who's counting.. 

She's my bestest friend and my maid of honor. She gave me the MOST AMAZING bachelorette party. ever. 

And was there to calm my nerves during my SEVEN bridal showers.. 

She will forever be the one to do my make up for any special occasion.. 

And we clearly like to share clothes.. 

We ruled the world trekking across Europe back in 2006..

This... is just too much. hahah 

Couldn't have done three weeks in Europe at the ripe age of 16 with anyone else.

We've got a LOT of concerts under our belts.. 

This was wayyy back in 2004. This. night. If you only knew.. 

She's "my person" .. My go to. The first one I turn to. 

She was there every step of mom's cancer journey and wore her breast cancer pin proudly.

She has the sweetest heart and the most giving spirit. 

And I couldn't imagine anyone "getting me" anymore than she does. 

Couldn't be me without you. 

Now hurry up and get here!!
