In Menu Monday Money Saving Recipes

Money Saving Meals

We had some yummy things this week!! Definitely thew in some old hearty classics along with some fresh stuff to squeeze in the last of those amazing summer vegetables. We have been trying really hard to get our grocery bill down after some insanely high ones this summer. Not being crazy coupon lady over here... Just looking at the weekly sale paper before I plan the menu and then adding coupons that you can simply load onto the grocery store app. I detailed our money saving tactics and a rough estimate cost of each meal below. 

Sunday: Ground Turkey Mushroom Stroganoff
(Makes a ton!! AJ ate it for lunch Monday and dinner Wednesday)
Ground turkey (on sale + coupon) $2.00
Mushrooms (on sale): $3.00
Egg Noodles: $0.99
Broth, Sour Cream, Wine:  $1.00
Total: $6.99 ($1.75 serving!)



Monday: Steak Gyros 
(Made three servings, AJ had again for Tuesday lunch)
Steak (on sale): $3.00
Pita Bread (coupon): $2.00
Tomatoes/Cucumbers/Onions: $1.50
Homemade Tzatiki: $1.50
Homemade Hummus: $2.00
Total: $10.00 ($3.33 per serving!) 




Tuesday: Bacon, Avocado, Tomato Salad
Lettuce (on sale): $0.99
Tomatoes: $0.50
Avocaodo (on sale): $1.25
1/2 Package of Bacon (on sale + coupon): $1.50
(used other half on breakfast Sunday)
Crutons/Dressing: $0.50
Total: $4.74 ($2.37 per serving!)



Wednesday: Work Dinner!
For me.. FREE! For AJ.. $3.00 leftovers! 


Thursday: Sausage Corn Bake
Sausage (sale + coupon): $2.00
Corn: $1.00
Onions: $0.50
Olive Oil/Balsamic/Dressing: $0.25???
Total: $3.75 ($1.88 per serving!)

In Menu Monday Money Saving Recipes Weekends

Weekend Wrap Up & FINALLY a Menu Monday

Happy June everyone! I can not believe how fast this year is flying by! This weekend we did absolutely nothing spectacular. It was 48 hours of eating, sleeping, and just hanging out with each other. And it was HEAVEN. 


Friday afternoon I did all the laundry then grabbed AJ from campus. We headed over to one of our favorite spots - Fresh Corn Grill. Their salmon was exactly what this mama was craving (after driving around Westwood for 15 minutes trying to figure out what exactly I was craving... haha)


Saturday morning we hung around the house and I made some fruit dip to go with my strawberry obsession. You blend together cream cheese, cool whip, and marshmallow fluff. It is SUPER easy and SUPER yummy. 


Saturday night we roasted ribs in the oven and AJ made some homemade cornbread. He is not a baker -- he normally leaves anything to do with measuring up to me. But he wanted to give this a try and it turned out great! Crunchy and soft and a little sweet. 


I made some peach cobbler for dessert. The peaches out here just aren't like the ones in Georgia. It was good, but just not right.. 


Not sure who was having a party, but we got a little impromptu firework show from our balcony on Saturday night. 


Sunday morning I made one of my childhood favorites, cinnamon toast and of course paired it with strawberries. It really looks like all we did this weekend was eat, oops! 


 Molly was REALLY into Game of Thrones last night. That pup loves watching TV! Meanwhile, I was reading a book with one eye open. I accidentally picked up the wrong bottle to wash my contacts with and grabbed hydrogen peroxide. We had to flush my eye out forever and then it was a red swollen mess the rest of the day. I am a walking hazard to myself!! 
  


Menu Monday - 06.06.15
I know I have been so MIA from Menu Monday for the last few weeks. I just have not been able to bring myself to eat a lot of things we normally cook around the Pryor household. I have been feeling better lately and have been trying to research Pinterest some things we both will like. They are all not healthy, or genius recipes, or cost effective... and a lot of them go against my no box meals rule, but I guess that's just me becoming a mom. Learning to not have hard set rules.. Going with the flow more often... And realizing that everything doesn't have to be perfect or by the book...


Sunday : Hamburger Patty, Mac & Cheese, and Side Salad
Box mac and cheese always sounds good to me. I normally go with Velveta, but I grabbed this Kraft kind instead and man oh man did it take me back to my childhood. Specifically summer camp at Ms. Croome's house! I also have been wanting a cold element to my meals lately, so a side salad or pasta salad seems to do the trick. This ground beef was on manager's special for $3 and made the perfect patties for me and Age.


Monday : Chicken Sausage and Sweet Potatoes
Tonight we are going to try out this kind of sausage. AJ will just cut it on the bias into bite size pieces and sear it in the cast iron. We have some sweet potatoes left over from last week, so I'm just going to pop them in the oven on 425 for an hour and a half. (*Poking holes in them with a fork and NOT covering them in foil makes the potatoes cook much more quickly.) 


Tuesday : Fish Tacos
This is a tried and true Pryor recipe. We have tortillas left over from last week, so I am using them twice this week so they will not go bad. Sear your fish in the cast iron (I like to use cod or tilapia) then throw them on a tortilla with lettuce, mango salsa, and a little sour cream. This meal can seriously be made in 15 minutes. 


Wednesday: Hogs in a Hammock
We should just call this week clean out the kitchen week. I had some cheese hot dogs in the freezer, so I put Hogs in a Hammock on the menu to get rid of them. You just wrap the dogs in crescent rolls and follow the baking instructions on the package. Because these are a little sinful, I'm pairing this dish with some fresh fruit.


Thursday : Pizza Quesadillas
My last meal of cleaning out the fridge week is pizza quesadillas. I found this gem on Mix and Match Mama's recipe site. We are putting mozzarella, ground sausage and pepperonis into tortillas and popping them on the George Foreman. All of these ingredients we already had in the fridge, so this recipe was a great find to change things up a little from regular old pizza. This week, we only spent $40 on groceries just by doing a little cleaning out!

In Money Saving Recipes TBT

TBT to Menu Monday

Because I had SO MUCH to talk about on Monday, I neglected to let you guys know what was on the menu this week in the Pryor household. So I'm going to do a little Throwback Thursday to Menu Monday! My flight got in late on Sunday and we will be in Louisiana on Friday, so four quick and easy meals for you to try out in your kitchen!

Monday
Pork Chops and Creamy Mushrooms
Pork chop with a veggie is our go to meal. It's cheap and quick! (Seriously, this meal can be ready in 10 minutes.) And not to mention, AJ has perfected cooking a pork chop. I mean, he's goooooood.

 We keep a jar of pre-made Alfredo sauce in the fridge to spice things up. I love love LOVE mushrooms and putting a little Alfredo sauce in with them. OMG.


Tuesday
Chicken Chipotle Bowl 
Chipotle bowls are a staple in the Pryor household. It's a "dump meal" of throwing in corn, beans, rice, cilantro, chicken, and a taco seasoning pack. When we plan to have chicken we always buy a whole chicken - having the breasts for a meal like this and using the legs/wings for baking. Buying the whole chicken is a huge cost savings!


Wednesday
Fried Chicken and Sauteed Squash
We very rarely have fried things.. I try to save our gluttony meals for the weekend. However, we are hosting a Southern themed dinner party next week and AJ wanted to get some chicken frying practice in. This chicken was so dang yummy I almost forgot to take a picture!!


Thursday
Stuffed Zucchini with Rice
Our meatless Monday came on Thursday this week. You can change out the ingredients for this meal with almost anything! You can add sausage, ground turkey, tomatoes, squash, any kind of spice, the list goes on and on. It's seriously a fool proof dish - I promise, you can't mess it up.



Directions

Preheat oven to 350 degrees F
Trim stems from zucchini and slice lengthwise. Scoop out seeds and put in bowl. Mix seeds with diced mushrooms, garlic, bread crumbs, salt, pepper and parmesan cheese. 
Bake in preheated oven for 45 minutes.
Serve over bed of rice.

In Menu Monday Money Saving Recipes Weekends

Weekend Review - Menu Monday

Friday afternoon I was so excited to come home and see that our new patio chair came in! Molly's boyfriend Charlie was hanging out with us for the weekend, so we spent the afternoon enjoying the new furniture and the HOT Los Angeles day. 


Friday night we attended the engagement party of my co-worker Tracey and her new fiance Andrew. The party was hosted by her Aunt Nancy in their gorgeous Beverly Hills home. We thoroughly enjoyed these yummy apps, wine, and celebrating the newly engaged couple! Excited to be helping Tracey plan the wedding of her dreams :) 

Like every other girl photo, we took at least five to get one we liked. I went to upload it and Google put them all together! How funny is this??  


Saturday we did a lot of couch sitting! These cute beagles hung out with me while I watched a ton of basketball. Saturday evening we went over to Culver City to have dinner with AJ's cousin, Stephanie, and check out her art. We purchased our first piece of original artwork form her! I'm thinking it will be added to the couch collage. 


Sunday morning I jumped back on the exercise wagon. Last year, I was working out 5 days a week at 5:00am and I just reached a point of exhaustion. With all the traveling we did during the holidays, I REALLY slacked off and quit working out completely. I have been feeling a little "soft" as I like to put it, so I started back running yesterday. (So sore today!) As I was walking back inside, the dew caught my eye - I thought it was a great for Palm Sunday!



We tried out Brentwood Presbyterian this week and really liked it! Neither one of us had ever been to a Presbyterian church before, so we weren't quite sure what to expect. It was a great mixture of the structure like Episcopal with some contemporary music thrown it. We will definitely be giving this one a second try! Sunday afternoon I did some Easter baking, which I will share with you tomorrow! Post Lemonade lunch selfie..


After dinner, Age did a little guitar playing for his favorite girls. I have not been as happy as I was in this moment in a really long time. The move to California has been rough, particularly on me. Things are getting easier, this place is growing on me, and I am incredibly blessed to have such a supportive husband making this journey worth the ride. 




Dinner Menu 3/30/15

Sunday: Fish Tacos
Any kind of tacos are quick and easy, but I love doing ours with fish to make them healthier. AJ made a quick spice rub and blackened the tilapia in the cast iron skillet. We paired the fish with sour cream, lettuce and his infamous mango salsa.



Monday: Black Bean Cakes
We always try to do a meatless Monday (or some day of the week) for cost and calorie savings. One of my favorites that we recycle pretty often, are black bean cakes. They are served best with a dollop of sour cream and mango salsa (leftover from last night - save and re-use for cost savings!)


AJ's Mango Salsa Recipe

1 mango diced
Juice of 3 limes
1/2 of red onion diced
1 tblsp of sugar
1/4 cup of chopped cilantro


Tuesday: Caprese Chicken
I have been reading up on growing basil in an effort to keep these plants alive! Apparently, I need to prune them often. So a recipe involving basil (AKA pesto, my FAVORITE!) had to be on the menu this week. We take boneless/skinless chicken breasts and sear them, then throw them in a casserole dish with cherry tomatoes, AJ's homemade pesto, Parmesan cheese and bake until the chicken is cooked through. 


Wednesday: Nut Crusted Cod and Asparagus
I usually plan the menu with recycled recipes and Pryor staples, but leave a day or two for AJ to try something new. He has been wanting to try his hand at nut crusted fish for quite awhile, so I grabbed some cod fillets that were on sale and we plan to pair them with asparagus.


Thursday: Skinny Sour Cream Enchiladas
When we have tacos on the menu, I always find an additional recipe that uses tortillas to not let the leftovers go to waste. This is one of my favorite Pinterest recipes I have found - how they are skinny is beyond me! You can find the recipe HERE. It makes a ton, so I put this on Thursday so AJ can have quick leftovers when I go to Georgia this weekend!



Our groceries for the week are usually around $70.. this includes breakfast and lunch for the week for AJ, dinner for the both of us for five nights, and any household items we are running low on. As you can see, a little meal planning, and thinking ahead can save money and not let food go to waste! I am planning another post to dive deeper on money saving tips we use to be able to afford the crazy cost of living in Los Angeles.
