In Menu Monday Recipes

What We're Eating..


Hey, hey! I love looking back at these posts when we get in dinner ruts, so here is a little of what we are eating lately.. I have been on the struggle bus with meal planning and just food in general. Most of our meals have been every man for himself with my complete detest of meat. But with my newfound energy in the second trimester, I was determined to get back to meal planning! Last Saturday I got out my pen and paper and made a plan! 


This was a new one - a twist on chicken parmesan. Texas toast, shredded chicken mixed with pizza sauce, and topped with parmesan cheese and paired with a side salad. I cooked 5 breasts, got out our portion for dinner ,and AJ had stuff for his lunch pitas all week! (I ended up just eating the bread and salad bc #meat, but AJ LOVED this!) Def will be swapping out different seasoning/toppings for this quick/easy dinner.


On Sunday night we had planned to eat with the Meisers. Unfortunately they got sick, so we headed into the city for a family date night at CowFish. We ate there in Atlanta alllll the time, and I am so happy to have one in Charlotte too! LOVE this combo of sushi, cheeseburgers, french fries and edemame. All my favorite worlds combined!


Monday night we had sweet potato gnocchi with brown butter and sage and fried zucchini. Our sweet potato gnocchi was from Trader Joes - it was good, but I've had better... And the zucchini!! This picture is a complete injustice to how amazing it was.. I slice them pretty slim, toss with olive oil and parmesan cheese and toss it in the air fryer for 10 mins. Prob why I have such an awful pic.. we were devouring these bad boys the second they came out. 


On Tuesday night we had AJ's work team over for a potluck. Each month they switch up whose house it is hosted at - we were excited to have our turn! Maddie Jane made it through about an hour of the party, then it was time for bath and bed. And since it was Mardi Gras, I was determined to have a King Cake. Of course every store in Charlotte was out of them, so I made my own.. and baby Jesus may have been substituted for Peppa Pig, but it was good nonetheless!! With this big undertaking, I kept my other contribution super simple with pigs in a blanket. 


Wednesday night we had Trader Joe's chili lime chicken burgers. (We eat them with no bun or toppings - they are THAT good!) And I paired them with a summer pasta salad. You can find the recipe HERE - it is incredibly good.. and even better the next day! 


On Thursday I had planned to have Trader Joe's orange chicken (see a TJs theme here? ha). but we still had so much food in our fridge from the week, that we did a clean out instead. Fun tip - I always save the frozen/pantry meals for the end of the week. That way if something comes up or you just need to clean out, that meal can easily be saved for later and nothing goes bad. 


As far as breakfast and lunch goes around here - I go in phases. The past couple weeks I have had greek yogurt with chopped fruit and granola. I CRAVE it and sometimes even eat it for dinner too! (previous weeks it has been breakfast burritos or hot ham and cheese..) AJ grabs a power bar at work for breakfast. I have done well with packing his lunches - lots of raw veggies, shredded chicken, hummus and a pita is what's usually on the menu for him. I can stomach tuna salad, fruit, carrots and ranch.. it's a toss up for me.. But nevertheless we are doing great at not eating out, ha!

In Healthy Eating Menu Monday Recipes

What we're eating..

The past couple nights we have had some seriously yummy meals, and they were all things I've never put on the blog. So.. I decided to write them down to reference later when we are in a dinner rut! Also I'm trying to lose the pesky 10 lbs I gain every single summer, so I'll be adding a healthy tag to this to reference next summer, ugh. 


Mexican Zucchini Boats
Zucchini at Kroger is so cheap and so fresh, so I doubled down on it. This meal is insanely easy. Split the zucchini in half and pre bake them for 15 minutes or so. Next brown some beef/turkey, pork, and add taco seasoning. Pile that in the "boat," add mexican cheese, and pop back in the oven to broil. Top it with green onions and a little sour cream and voila! 


 Salmon Burgers w/Avocado & Bacon
I was soooo skeptical when I found these salmon burgers in the freezer section at Kroger, but they are on repeat now in the Pryor household! Last time we had them with big ole fluffy potato rolls and an aioli and they were MUCH better but.. tight pants = no carbs. So you bake the patties and the bacon on a sheet pan in the oven, smash an avocado with a pinch of salt, and pile it all together with a simple side. And dinner is ready in like 25 mins. 


Zoodles Chicken Stir Fry
For zucchini round two, we used our spiralizer and made zoodles. AJ marinated the zoodles with Asian sauces (soy, rice wine vinegar, etc.) and set them off to the side. We sauteed red onion, green beans, mushrooms, and chicken and mixed them all together. We served them with green onions AND I had it for lunch the next day. Delicious!

What’s Up Wednesday


The last Wednesday of every month I link up with Mel, Shay and Sheaffer for What's Up Wednesday. These posts are always a doozy, but my favorite to go back and read! 

1. What we're eating...
I change up where I grocery shop each week.. Sometimes Kroger, sometimes Buford Farmer's Market.. this week it was Trader Joe's! I love the variety of changing it up each week.

Saturday: We grilled out! Brats and asparagus

Sunday: Homemade pizza - dough, sausage, sauce and cheese blend all AMAZING quality from TJ's

Monday: I was at book club and MJ/AJ ate.. something? ha
Tuesday: Butternut squash ravioli and sauteed mushrooms
Wednesday: Grilling again because it's 75 today!! Chicken and salad
Thursday: Riced caulifolower and orange chicken or mushroom chicken TBD
Here are some of my TJ favorites! Their freezer sections will not let you down!! 



2. What I'm reminiscing about...

Our date night! We have been really good the past couple months about doing date nights every 3-ish weeks! We are firm believers on continuing to "date" even in marriage. Last Friday night Ms. Sam came over to watch Maddie Jane and we had a SUCH a good time! 


We started the night at the St. Regis for a cocktail. It's been on my list to go to for forever, and it did not disappoint! Such a nice ambiance -- now we need to save our pennies to be able to go to Atlas next door to the St Regis bar :)




After some yummy cocktails, we walked down the street to King and Duke. I had been once before and it was just as good as I remembered!





Then we weren't quite ready to go home, so we walked across the street for one last stop at Gypsy Kitchen. I was worried it was going to be too cold.. but the heaters made it perfect!




3. What I'm loving...
There is a lot in this picture I'm loving!! This man, the full bellies we had after leaving brunch with Bruce and those new earrings I have on!! (They are 50% off at Nordstrom Rack right now - get them HERE


Also love this little girl who refuses to wear anything but a "twirl, twirl" (dress) and spends all her waking hours doing this.. 





4. What we've been up to...
This week I have been at a SHRM conference. I have been totally geeking out at all the HR knowledge and soaking up every bit I can. It was in Atlanta so I have been able to come home each night :) 


There were tons of vendors there for benefits, payroll, team outings, etc. Six Flags happened to be one of them and I snagged this Wonder Woman pink cape for Maddie Jane!  She has been running around the house "flying" ever since!





5. What I'm dreading...
More potty training! Taking the potty to Sandersville this weekend - maybe Gigi or Namma can talk her into going on it -_-


6. What I'm working on...
Keeping our house spring like! I did one round of flower planting back in February, but will have to re-plant those soon.. And I have been getting tulips each week at the grocery store. They just make me so stinkin happy! 


Just something about keeping fresh flowers in the house that's good for the soul.




  7. What I'm excited about...

This weather!! We have had some cold snaps, but I thiiiiink the nice warm weather is here to stay! We will be spending all our time outside until it gets miserable hot. 


Our backyard isn't even close to where we want it to be (we were so spoiled by our last house) but we are steady working on it and maybe it will be there by summer 2019.. 



  8. What I'm watching/reading...
This week I had book club! We read The Nightingale - well I read it like 8 months ago. So it's not super fresh on my memory, but I remember it being one of the worst books ever! hahaha I am in the vast minority in my book club (and Amazon reviewers too). All the girls looooooved it, so maybe check it out for yourself? ha! Next up on the list is Little Fires Everywhere, which I have much higher hopes for!


9. What I'm listening to...
Right now the birds chirping outside and it's GLORIOUS. 


10. What I'm wearing...
 I hope this is the last time I show sweaters for awhile! As comy and cozy as they are.. I'm over them! 
11. What I'm doing this weekend...
All things Easter! We are headed to our hometown Friday afternoon to spend time with the fam and I am pumped!! (Also have a birthday party and baby shower to attend!) This past weekend we went to our neighborhood Easter egg hunt and Maddie Jane was a rockstar! Here is a big ole photo dump, but they are all just too stinkin cute not to post..

   12. What I'm looking forward to next month... 
Hopefully doing a little of this!!! 

And maybe a little of this! HA but seriously, we have some fun stuff going on next month! One of my bestest friends in the world is getting married! And we will have a parents only weekend for that at Lake Oconee. And our favorite guy has his birthday in April! Trying to get a date night nailed down for that :)

What's Up Wednesday


1. What we're eating...
Sunday: Chicken meatballs (randomly made them with onion soup mix, SO good!)
Monday: Grilled chicken parmesan & corn
Tuesday: Chicken alfredo (AJ made TWELVE pasta dishes and froze them last week. All the praise hands for easy dinners during the week.)
Wednesday: Chipotle lime salmon & asparagus 
Thursday: Cornish hens & roasted potatoes
Friday: Date night!!!

(And here is a picture of our cutie girl eating seaweed salad with chopsticks. TOTALLY my kid. Give me all the seaweed and sushi, every.single.day.)


2. What I'm reminiscing about...
 Beverly's super fun bachelorette weekend! You can watch a fun video I made of it HERE.


3. What I'm loving...
Well what Maddie Jane is loving.. her new microphone that sings Let It Go! Of course our microphone loving friend, Kayley gave MJ her first one. And pretty sure she hasn't put it down since! 


And yes, she insists on signing into the wrong end, haha! 



4. What we've been up to...
This weekend we hosted a house warming party for all our our friends to come see our new place! I made these little "Our life would SUC without you" succulents as favors.


A big bucket of beer and white wine on this side, and red over to the other. I was running around so frantically beforehand, I totally forgot to take pictures of the food. We kept it easy with several finger foods.. 


Our house was full to the brim with some of our very favorite people. My heart was just BEAMING. We have waited so, so long for this. LOVE our people and being back home.


Maddie Jane sure did love all the attention too. Not sure how many people she talked into pulling her around in her red wagon. 


Sweet Kell Bell helped me pull all this together (We have a rule to not go more than two weeks without seeing each other now.. living our best life.) And finally reunited with my other college bestie Allie. She lives less than three miles from us!! 


And a huge majority of AJ's pledge brothers all live in Atlanta now too. I know I'm a broken record but y'all... life is good.


We started the party at 4pm, so everyone was gone by 8pm... and we all collapsed on MJ's floor immediately after! 



5. What I'm dreading...
 Pollen season! All three of us are already sneezing and going through multiple tissue boxes per week. We need to get medicated STAT.


6. What I'm working on...
Our landscaping! Before the party, I got our window boxes planted, and the little area by the front door. Next on our list is getting pine straw and mulch down as well. 



And this one has been a big help carrying our pail around each afternoon to get everything watered.



7. What I'm excited about...
Finally having our fence done! So now Molly and Maddie Jane can come and go outside as they please! This particular day I was watching Maddie slide, and AJ cook, and a warm breeze was blowing in, and I had an ice cold glass of Kim Crawford. Ahhhh.


 We are enjoying this window of perfection before it is 100 degrees! (Girlfriend rocks these high heel Minnie Mouse shoes any chance she gets!)


And Molly is in HEAVEN. We have a ton of work left to do cleaning out the backyard. But waiting on my Stepdad to come up to help with all that in a few weeks.. 



8. What I'm watching/reading...
 I listened to The Wife Between Us driving to and from Bev's Bach and Y'ALL.. IT IS SO GOOD. Like, best book I have read in the last year. Go now! It's not your average chick lit - you will constantly be surprised. 



I also read Andi Dorfman's Single State of Mind this month. I read her first book, It's Not Okayand had this bad boy pre-ordered! Reading her book is like chatting with a girlfriend.. I was so sad when it was over! I kept looking back at her insta to match up the stories with pictures, which was really fun!



9. What I'm listening to...
We've had The Lumineers Pandora station rocking lately. Solid playlist to wind down the evening.



10. What I'm wearing...
I took a grand total of ONE outfit picture this month. Blogger fail. But it is something I am doing a lot lately.. "winter white"! I have been rocking my white jeans with light sweaters as we are transitioning into warmer weather.. 


Also wearing THIS polish! I just got my own gel light and I don't know why I didn't do it sooner. I was going every two weeks to get my nails done, spending a ton of money, and not always liking the finished product.  


Now my nails are done for free, it takes 15 minutes, and if one nail messes up, I can super quickly re-do it. My gel light is HERE for reference. I feel like it's such a steal and great quality. (Thanks to Elizabeth Holland for the recommendation!!) 



11. What I'm doing this weekend...
I'm going on a date with this hunk! We snagged a babysitter for Friday night, so we have plans for wine tasting and robata! Saturday I have some girl time planned with Kelley at the Beltline and taking it easy the rest of the weekend! 



12. What I'm looking forward to next month...
 We have a lot planned in March, but fortunately, it's mostly close to home. My mom and stepdad are coming up to help with some house stuff, my step sisters are coming up to go to the zoo, we have a neighborhood Easter egg hunt, Brit and her fam are coming up to go to the aquarium, and finishing the month off back in Sandersville for a shower I'm helping host for Kelli and Easter with the fam!
